A tried and true favorite. I hadn't made this since Jon and I started dating but it is such a quick and easy recipe I'm happy I remembered it.
2 large cans whole tomatoes
2 red bell peppers in chunks
Fresh or dried thyme
Fresh or dried oregano
Fresh or dried rosemary
Fresh or dried basil
10 or so garlic cloves
Combine tomatoes, peppers, herbs and garlic into a large baking pan (like a Pyrex). Drizzle olive oil over everything and toss to coat. Place into a 425* oven and let roast for about an hour. In batches, blend the roasted tomatoes and peppers in either a food processor or a blender. Be careful to do small batches so that your blender doesn't explode!
After blending each batch, transfer to a saucepan on the stove. When everything is blended, add in about a 1/2 cup of Parmesan cheese. Stir and heat until it is all thoroughly combined. Serve over whole wheat penne or spaghetti pasta.
This sauce is also great on pizza and freezes well!
